At the helm of the Las Palmas farm is Bryan Alvear. Bryan isn't just a farmer; he is a fourth-generation producer with 18 years of dirt-under-the-fingernails experience. But where others stick to the script, Bryan rewrites it.
Leveraging his family’s heritage knowledge, Bryan has pivoted hard toward innovation. He treats his farm like a laboratory, obsessively tweaking variables to create cup profiles that are clean, consistent, and frankly, mind-blowing.
The "Recipe": How the Muffin is Made
This coffee gets its name from a wild 'recipe.' After harvesting, the beans undergo a unique fermentation process where they are marinated with molasses for sweetness and fresh blueberry pulp for flavor. The result? The beans absorb the fruit notes, creating a natural, juicy profile that tastes just like a blueberry muffin.
After this marathon of fermentation, the coffee is washed and sun-dried on patios for up to 15 days, sealing in that wild flavor profile.
The result is a cup that defies logic. It is juicy, expressive, and incredibly well-balanced. You get the loud, clean fruit notes of fresh blueberries, supported by the heavy, sweet body of molasses and panela. It is a Blueberry Muffin in liquid form.
