Anaerobic honey processing gives this exceptional crop a unique character. The coffee beans are left to ferment within their slimy membrane for up to 72 hours in a carefully controlled environment. The beans are then spread out on raised beds, exposed to sunlight and fresh air, which brings out their unique aromatic profile.
