The story of this particular coffee began with a risk. Aida, ever restless with the status quo, looked at the fertile volcanic slopes of Santa Ana and imagined a new taste. She decided to bring the celebrated Kenya SL28 and SL34 varietals, famous for their vibrant, complex character to Salvadoran soil. It was an experiment few would dare. She personally selected the spot on her farm, understanding the unique interplay of sun, wind, and soil that would be needed to coax greatness from these foreign seeds.

As the coffee trees matured under her watchful eye, Aida became obsessed with a single idea: capturing the purest expression of the fruit. When the cherries finally blushed a deep, perfect red, she knew a standard process wouldn’t do. She had to innovate.

This is where the coffee becomes pure Aida. Instead of washing the beans, she chose the arduous natural process, a method that requires constant vigilance. She instructed her team to lay the whole, perfect cherries on raised African beds, but with a crucial difference: they were placed under shade. Day after day, she would visit the drying beds herself, running her hands through the cherries, checking their progress, ensuring they dried slowly, evenly, allowing the bean inside to absorb all the complex sugars and fruit notes from the pulp.
