Bombay was named after Mount Bombay in the Sidamo region of southern Ethiopia, believed to be the birthplace of coffee. According to legend, a shepherd named Kaldi noticed his flock suddenly became energetic after eating strange red cherries, and it was later discovered that the secret lay in the coffee.
What is peaberry coffee?
What distinguishes this crop is that it comes from a different type known as the peperi. As you know, natural coffee beans contain two seeds inside them that grow flat against each other like peanut halves, if the analogy is correct. However, as a result of a natural mutation that occurred in this type, which constitutes about 5% of the coffee harvest, the coffee beans contain only one seed, like a solitary child. This makes the coffee bean pampered and preferred, as it is the result of the space it has been given, resulting in smaller size, higher density, sweeter, and richer in concentrated and complex flavors in the cup compared to regular coffee beans.
