Sadayana is a coffee washing station located in a Sundanese-majority area in Java, Indonesia, funded by Sucafina in March 2022. Around 200 local farmers deliver coffee cherries to the station, which offers services such as agronomic support and affordable seedlings . The coffee produced has sensory notes of honey, blackberry and gianduia, and is processed with a washed process at an altitude of 1200-1700 meters.

WHERE’S IT FROM?

Although Indonesia is known for the Wet Hulled processing method, more and more cooperatives and processors are diversifying their processing methods to access new markets. At the Sadayana station, the cherries are hand-selected, pulped, and fermented for 16 hours, then washed and dried on raised beds for 7-15 days. Indonesia has a long history of coffee production, but recently its coffees have been overlooked by the specialty market. Sucafina's innovative supply chain aims to bring these high-quality coffees back to the market, with a particular focus on traceability and unique processes such as giling basah, which likely originated in Aceh in the 1970s.
