Crafted through an innovative Honey Mossto process, this coffee begins with cherries soaked for two hours, then fermented for 72 hours under carbonic maceration. A mossto starter—made with Schnapps Turbo Yeast, glucose, and amino acids—is introduced after pulping to enhance sweetness and aroma. The coffee then undergoes a second fermentation with dehydrated watermelon pulp, developing its signature fruity profile.
Sun-dried on African beds for about 15 days, the beans are carefully stabilized and rested before cupping and sorting. The result is a vibrant cup with juicy watermelon sweetness, candy-like notes, and a smooth, refreshing finish.
